Sea bass

(Dicentrarchus labrax)

Sea bass is increasingly offered for sale. Fish is often on the menu, especially in the catering industry. Thanks to nurseries in Scotland and Greece, sea bass is available all year round. Sea bass is a sleek, smart fish. When the sun shines and the days and nights are clear, considerably less sea bass is caught. The sea bass can then distinguish the boats well. Catches are greater in stormy weather.

The back is gray or blue, flanks are silver, and the belly is yellowish or white. Maximum length is 80 cm.

The taste is sweet and mild with a fine structure.
